I want to change my rims to something wider but still 16 inches, I was thinking something like 3rd gen rx7 rims which are 16X8, if my car was lowered, would I have any trouble with it, like scrubbing the inner fender?

Depends on the offset and the tire width also. Stay between +35 to +45mm offset. I believe some people have managed to fit 235 series on 2" lowered cars but any wider and you will probably rub.

Just for reference check out the www.dsm.org site. It has tips and explanations on wheel sizing.
